The challenge: a restaurant is several systems that must agree in the same instant
A restaurant order is not one event, it is a chain. A table places it, the kitchen has to see it the moment it lands, the till has to reconcile it against what was served, and the manager has to make sense of the whole day once service ends. If any link in that chain lags, a ticket goes missing, a kitchen cooks something that was already cancelled, or a till total stops matching what actually happened on the floor. None of this can wait for new hardware: the printers and the payment terminals a restaurant already owns have to keep working, not get replaced. Staff turn over table by table and shift by shift, so clock-ins, breaks, shift reports and tip splitting need a system rather than a notebook by the till. The same menu has to read naturally in Albanian, English and Italian, sometimes for neighbouring tables on the same night. And underneath all of it, in Albania, every one of those orders still has to become a fiscally valid invoice under ligji 87/2019, a requirement the system has to carry without ever becoming the point of the system.

What this case study says about working with Square
The interesting decision in this project was not a feature, it was a vocabulary one. In Albanian search, the words a restaurant owner might be expected to type do not exist: program per restorant, software restorant, sistem per restorant and menu me qr each return no measurable search volume. The one neighbouring term with any volume at all is program bar kafe, at a small 10 searches a month. Fiskalizimi, by contrast, is searched about 3,600 times a month. Those two facts together say something real about the market: restaurant owners are not searching for restaurant software as a category, because as a category it is not yet something they know to look for. They are searching for the legal obligation they already understand. So the product was built and can be found through the problem people already know they have, with the operational platform, the ordering, the kitchen display, the shifts, riding along underneath it rather than leading. The same discipline shows up inside the product: fiscalization is treated as a constraint the system has to satisfy correctly, not as the headline.
